Dandelion Petal Jam

I spoke with Margaret Gallagher from North by Northwest, CBC the other day and here is the recipe for dandelion flower petals that we spoke about.

6.5 cups of dandelion flower petals

4 cups of water

1 apple finely chopped

1/2 cup chia seeds

1 2/3 cup raw cane sugar

Cook down. Run through the food processor.

Continue to cook down until thickened.

I freeze rather than can this... or keep in the fridge and it gets eaten quickly.

Makes a great spread/jam for a piece of toast or as a spoonful for a bowl of porridge.
